The Restaurateur  Chef Enzo Oliveri [in photo] has worked across Europe, The United Statesand at many of London’s finest hotels.He has cooked for Princess Diana,

 PrimeMinisters and Madonna and now owns the very successful El Patio, to book call 020 8466 7799 and La Pasta, to book call 020 8466 6898, Restaurants in Bromley.

Enzo has a passion for cooking and runs the very popular ‘Sicilian Chef’ Cookery Schoolwhere he educates both adults and children in the joys of preparing, cooking and appreciating good, healthy food. He has recently been asked to hold classes at The Italian Cultural Institute in Central London and is in high demand for appearances at exhibitions such as ‘La Dolce Vita’ and ‘The London Wine Fair’. He appeared with Gordon Ramsay on the ‘F Word’ and is currently preparing to film a TV series for the Good Food Channel on Sicilian cuisine.

Devils Chicken (Pollo alla Diavola)

INGREDIENTS
Serves 4

4 tblsVegetable Oil
1 Deboned Chicken (whole)
3 Cloves Garlic sliced
Chili
1tsp Paprika
Olive Oil
2 Sprigs Rosemary

  1. Using a large saucepan, boil the water with a pinch of salt. Add the rice and the saffron and cook on a medium heat for 20mins or until all the water has been absorbed 
    The Sauce:
    Heat 4tbsp vegetable oil and fry the onion until golden in colour, add celery, carrots and mince meat until the meat has become greyish in colour
              3.On a high heat add the red wine in order for it to evaporate.
              4.Take a quarter of the cooked rice and flatten into the palm of your hand. Put 1 tablespoon of sauce into the centre along with 3 cubes of mozzarella. Mould into a ball
              6.Mix the flour and water and roll the rice ball through the mix. 
              7.Cover rice ball in bread crumbs.
              8.Heat the vegetable oil on a high heat and deep fry until golden brown.
              9.Serve
