SPAGHETTI WITH CLAMS AND ASPARAGUS

INGREDIENTS 4 portions
  • 300 g of spaghetti
  • 1 kg of clams
  • Around 500 g of asparagus
  • 1 green onion
  • 1 clove of garlic
  • Extra virgin olive oil
  • Dry white wine
  • Salt
  • Chili pepper
  • Chopped parsley

Instructions:
Rinse the clams under cold water and then put then in a big bowl of water with 2 spoons

of salt for at least 4 hours.

Carefully wash asparagus, cut off the white lower part

of the vegetable and cut the green part into diagonal slices.

Leave out the top part. Stew the chopped green onion in 2 spoons of olive oil and one spoon of water.

Once it’s soft, add the asparagus that you have prepared earlier,

together with salt and stew it altogether for another 5 or 6 minutes.

If it’s necessary, add another spoon or two of boiling water.
