The Sardinian Porceddu sardo (a sweet flavoured suckling pig) goes to conquer London

London- (Caterina Belloni) Thanks to the cooperation with Sardinia wines and Antonello Salis, in fact, Monday 7th of November you can taste the pork cooked following the traditional recipe of the island in the first Festival of Sardinian procedure hosted by the United Kingdom. One more element to make known to the English-speaking world the delights of Italy.

The occasion will be the Gusto Italia show room, held in the ballroom of the Sheraton Hotel and that will see Sardinia depicted with numerous exhibitors. A leading role lies with the delegation of the Association Centro Storico Sa Costa of Bosa, which promotes the Bosa Wine Festival and will present its wines in London scenario. In the stalls set up for the region, sponsoring the event together with the municipality of Bosa, however, will be offered even the rice from Oristano, some other typical products, the mineral water Smeraldina. There will be men and women in traditional costume, will be revealed the wonders of the filet, the embroidery that made it famous and now comes in Bosa with thousands of shapes, from traditional lace to the recent production of textile jewellery. A terrific opportunity to discover a part of the island and describe its beauty.

Among the exhibitors engaged in fair, in fact, you will find wood and restoration experts, exhibitors of knives, craftsmen specialized in making traditional masks. “We’ll get to Bosa with a delegation of at least twenty people between companies and volunteers – says Mario Stara, President of Associazione Centro Storico Sa Costa promoting Bosa Wine Festival-. We will propose to the public, made up of buyers, distributors, chefs and experts, the peculiarities of our production, from food to wine up to the elements of artistic craftsmanship. This is our second visit to London and we are keen to continue this partnership with Gusto Italia to promote our wealth beyond the Italian borders. The Province of Rome was the heart of this year’s “La Dolce Vita” Italian Lifestyle Exhibition, held March 9 -11 at the London Business Design Centre. Take the Castelli Romani Wine route to the south-east of Rome through Regional Parks and volcanic lakes and visit the magnificent Villa Aldobrandini. Interested in the Etruscans? An essential stop in the Eternal City should be a visit to the Enoteca Provincia Roma (Winery of the Province of Rome), in Palazzo Valentini, by Trajan’s Column. All its gastronomic glories are on display, plus special feast-day samplings like the bigne di San Giuseppe on March 19th. All roads lead to Rome. That used to be the motto. But now with the new website www.romaepiu.it surely that should be reversed? All roads should lead away from Rome – into its Province. May be there is just one problem – once you begin exploring the Province of Rome would you ever want to leave? The same could be said of the “La Dolce Vita” Exhibition.

How many visitors who were just “popping in” for a short visit found themselves still wandering around captivated over two or three hours later? From tours of Pavia or Sicily, property for every pocket from cottage to castle, one-stop wedding shops, elegant accessories, Sardinian filigree jewellery, representatives from Rome to Riccione, Umbria to Abruzzo, Basilicata and Liguria – there was so much to discover. And the food! Where do we begin? The choice was overwhelming – award-winning wines and olive oils, succulent salamis, cherished cheeses, delicious desserts of crepes or cannoli and, after all the sampling, a much needed digestivo or a strong espresso before going round “just one more time”.

People of all ages fought for places at the Cookery demonstrations. Galbani products inspired Valentina Harris. Giancarlo Caldesi used Birra Moretti in his recipes while Gino D’Acampo epitomised the passion which lies at the heart of all good Italian cooking. Judging by the bulging shopping bags that visitors were carrying on their way out many recipes were going to tried at home too – that is if they ever felt hungry again! La Dolce Vita might not be so obvious in crisis-torn Italy today but it is alive and well and thriving in Islington. Bravissima!

The Dolce Vita Exhibition has just concluded its show held from 9 to 11 of march at  Business Centre in Islinghton  and many visitors has still in memory tastes and flavors of Italian gastronomic fragrances and territories to discover.

This year the province of Rome and the president Nicola Zingaretti has decided to take part at the exhibition in order to promote the beauty of the territory and the quality of the products of the Roman area.

The province of Rome has launched the website www.romaepiù.it dedicated to the promotion of the surrounding areas of Rome.Many tourists that travel in the City of Rome ignore the beautiful places loved and depicted by great painters, poets and intellectuals near the Capital.

Archeological sites such as Cerveteri, world heritage site, the historical scenery of the Castelli Romani , abbeys , mountains, volcanic lakes and wildlife reserves.

The President Nicola Zingaretti claimed that the re-launch of the areas must  develop through environmental sustainability, public well-being quality and innovation as the parameters of all the choices of the Government.

When we speak about Italy beautiful territories go together with excellent food and wine.The Province of Rome achieve to promote the DOC labels of many wines producers such as Consortium of Frascati, the “Strada del Vino Cesanese” the “Strada dei vini dei Castelli Romani” and “the Terra Etrusco Romana” that are wine and food  itineraries.

The event concluded with a lesson of Roman cuisine  of the chef Claudio Ciocca well known for his brotherly friendship with the director Federico Fellini. Ciocca’s Restaurant in Grottaferrata is the most ancient in Rome, it is cited in Pope Bull on 1500 and the restaurant was the destination chosen by Elizabeth Taylor and other famous actors for their dinner in Rome.

 The FABBRICA LIQUORI LA MORGIA was created from an idea of Giuseppe Troilo around the 1920s.

The family business founded by Giuseppe Troilo in early’900, was handed down to subsequent generations, the son Nicolino Troilo, and now the nephew Giovannina Troilo.

The company, under the direction of Nicolino Troilo had the honour to win the award Europe International Business Corporation about the work done nationally and internationally, issued by the Academy for the Italian Economic and Social Development in 1982.

The aim of the company is to make well known his specialty: GRAN LIQUORE LA MORGIA – Stille D’Arancia a liqueur hand made with orange drops and natural ingredients.

Fresh mozzarella Italian taste in the world

At the Dolce Vita 9 to 11 March in London, you can taste the original products of the region ofItaly, as you can find products, mozzarella, pecorino, doc wine, salami, and you can test andtry these products in a relaxed atmosphere. but how do you make Italian cheeses such as pecorino and mozzarella?

For the mozzarella there is legend, was first made when cheese curds accidently fell into a pail of hot water in a cheese factory near Naples…and soon thereafter the first pizza was made! Actually, new cheeses are often formulated when mistakes happen, so there well may be truth in the tale! Mozzarella was first made in Italy near Naples from the rich milk of water buffalos.

Because it was not made from pasteurized milk and because there was little or no refrigeration the cheese had a very short shelf-life and seldom left the southern region of Italy near Naples where it was made.

As cheese technology, refrigeration and transportation systems developed the cheese spread to other regions of Italy. However, to this day it is widely known that the best and most highly prized artisanal produced buffalo mozzarella is still found south of Naples near Battipaglia and Caserta where small factories continue centuries-old traditions making buffalo mozzarella fresh daily for their local customers, who line up at the factories to buy this delicacy.

The peculiarity of this cheese is entirely due to the technology used in its traditional preparation. It is produced exclusively from whole buffalo milk and, after drawing and moulding, may also be smoked, but only using natural, traditional procedures.Buffalo milk is not for drinking and is used exclusively for making mozzarella. Indeed, it is so nutritious and so rich in fat and cassein that it would be indigestible over the breakfast table, whereas it is the best for the cheese industry. Cow’s-milk mozzarella is a ball of fresh cheese swimming in brine, pleasant as ice cream but absolutely tasteless.

Made out of buffalo milk, instead, it becomes an altogether different matter. By visiting one of the many small dairies scattered over the district between Caserta and Salerno, you can see the way mozzarella is made, which is a very fast process.

The milk is brought in, curdled, then drained to eliminate the whey. After this the curd is cut into small pieces, then ground up in a sort of primitive mill.

At this point, reduced to crumbles, the curd is put into a mold and immersed in hot water, where it is stirred until it takes on a rubbery texture. The cheesemaker kneads it with his hands, like a baker making bread, until he obtains a smooth, shiny paste, a strand of which he pulls out and lops off, forming the individual mozzarella (“mozzare” in Italian in fact means to lop off). These in turn are put into cold water and then to soak in brine.

The cheese absorbs as much salt as is necessary and has to take on consistency. In the end, it must not be soft and mushy when cut but fibrous and elastic, so that if poked it springs back to its original shape. Mozzarella, prepared in the evening is ready the next morning, oozing with freshness and richly flavored. Fresh mozzarella is generally white, but may vary seasonally to slightly yellow depending on the animal’s diet. It is a semi-soft cheese. Due to its high moisture content, it is traditionally served the day it is made, but can be kept in brine for up to a week, or longer when sold in vacuum-sealed packages.

Low-moisture mozzarella can be kept refrigerated for up to a month, though some shredded low-moisture mozzarella is sold with a shelf life of up to six months.

Mozzarella of several kinds are also used for most types of pizza and several pasta dishes, such as lasagna, or served with sliced tomatoes and basil in insalata caprese.

Jewellery in Sardinia has been made using the method of filigree workmanship for many centuries. In fact, the Sardinian tradition for filigree is between the most ancient in the world. It started with the decoration of sacred utensils for religious purposes, it continued with the creation of articles mainly produce to protect from evil’s eye (ill-wishing) to then reach the maximum level of intricacy with the decoration of filigree jewellery used to beatify women’s figure.

Mixed with the traditional are exciting contemporary designs made possible thanks to a series of “significant innovations” in filigree metalwork. Indeed, several techniques used for KOKKU’s jewellery are patented and exclusively used by the local manufacturers. “There are two significant innovations,” explained Andrea. “The first is the size of the thread used. Some of our jewellery is decorated with filigree made of a thread with a diameter that can be as thin as 0.25mm.

“The second is the use of the filigree itself. In the original style of workmanship the filigree is used to decorate and beautify jewellery by adding a graceful touch. In many of our jewellery pieces, however, filigree is used not as a decorative addition but as a structural support for the design, making the pieces volumetric and light.” He added: “Each piece of KOKKU jewellery is timeless, and yet resonant both with its own heritage and with special moments in the person’s life. There is a definite mystic quality to it.”
